Product Description

Filet mignon is a premium luxurious cut taken from the tenderloin section.  It is renowned for its tenderness, mild buttery flavor, and for its melt-in-your-mouth texture.  Filet mignon can be grilled, pan-seared, or oven-roasted. It’s often cooked to medium-rare or medium to preserve its tenderness and juiciness. Because of its leanness, care needs to be taken not to overcook it, which could lead to dryness.

Wonderful ribeye and filet mignon marbling.

We have had the opportunity to try the blue label ribeye and filet mignon. Both are very good. The ribeye had wonderful marbling and flavor while the tenderloin had a tender and delicate flavor.

The parentage of animals harvested at 7 Foot® Farm is analyzed using the American Angus Assoc’s EPD (Estimated Progeny Difference) system.

Twenty three (23) heritable traits such as marbling, ribeye size and back fat data are collected and used in the selection of Purebred Angus cattle.
