Short ribs are a flavorful and versatile cut of beef prized for its rich taste and tenderness.  They have become increasingly popular in both home cooking and fine dining, celebrated for their deep, beefy flavor and tender texture.  Their ability to absorb flavors during cooking makes them favorite for braised dishes and hearty stews.

Dino ribs are much larger cuts, known for the longer (6-12") bones, compared to short ribs. Being larger, meatier and even more marbled, Dino ribs are similar to a "brisket on a stick" and can be an excellent choice for your smoker. Our Dino ribs are each generally 6.5 lbs or more!

The Roger D. System uses a proprietary, mechanical invention to measure tenderness.

The device records the force required to cut through a cooked test steak.

Each test steak is the same cut and size, which leaves the cutting force as the only variable.

EPD Score

The parentage of animals harvested at 7 Foot® Farm is analyzed using the American Angus Assoc’s EPD (Estimated Progeny Difference) system.

Twenty three (23) heritable traits such as marbling, ribeye size and back fat data are collected and used in the selection of Purebred Angus cattle.
