Skirt Steak

Product Description

The skirt steak is a long, thin cut that comes from under the rib section.  It is known for its rich beefy flavor.  We recommend cooking over high heat and slice against the grain after cooking to enhance tenderness.  Due to its thin nature, it cooks fairly quickly and is often enjoyed medium-rare to medium.

Choose a skirt steak when you are looking for any Tex-Mex recipes.

Skirt Steak Surprise

I was pleasantly surprised to discover how much meat there is in a skirt steak which was more than enough for my husband and I to enjoy. Tender, and delicious!

Roger D. Tenderness Test

The Roger D. System uses a proprietary, mechanical invention to measure tenderness.

The device records the force required to cut through a cooked test steak.

Each test steak is the same cut and size, which leaves the cutting force as the only variable.
